Did everyone have a festive and fun Fourth of July? Ours was super chill — rollerblading, gardening, grilling, a bonfire… oh, and simultaneously lighting all of the sparklers leftover from our wedding send-off nearly seven (!!) years ago now.

Husband, 1; plastic planter staging area, 0. The simple things make us smile the widest.

To continue my trend of meals on top of melon, this Weekly Suppers memory comes from the mind of Jamie Oliver, with a few tweaks from yours truly: Head-on shrimp marinated in lime and grilled atop chunks of grilled NC watermelon + a mix of homegrown spinach and arugula tossed in a spicy chilli lime vinaigrette. Fresh mint leaves, chopped chives and toasted sesame seeds to finish. With a light Beaujolais, we raised our glasses to this gorgeous meal of local seafood and local produce + our nation’s 241st birthday.

Other recent hits included deep bowls of bucatini all’Amatriciana + a chicken-bacon-garlic cream sauce #fridaynightpizza — both made with homemade. bacon. — and a cocoa cinnamon angel food cake. Great // eats // lately!

      Thanks, Sandy! I don’t know that we’re entirely sold on the hot watermelon concept, but it was very good overall. We purposely grilled an extra slab of melon, and the leftovers made an excellent (chilled) “salsa” with my pickled jalapeños, lime and cilantro for fish tacos later in the week! It’s been ages since my last visit to Horicon Marsh, and would love to return soon, preferably in autumn to witness the annual goose migration. What a sight it must be! Glad you enjoyed the post and your holiday!
