Here’s a simple, flavorful dish suitable for a quick weeknight supper that takes only around 45 minutes from start to finish.
Though our Midwestern constitutions don’t always feel at home in the South, we fully appreciate just how lucky we are to live on the Atlantic shore where seafood is not only abundant but caught-that-morning fresh. Today’s bowl of goodness features briny sweet NC littlenecks, but takes its inspiration from memories of travelling to two other coastal areas.
First are Roaring Water Bay mussels that we steamed in a heady Sligo County brew with bacon and cabbage. A feast taken watching the moon rise over the inky black waters of Baltimore, County Cork, Ireland. The other, cherrystone clams cooked with garlic, chillies, lemon and a splash of a local white wine. In the postcard village of Lubec, ME, perched at the northeastern tip of the US, it was a meal prepared in the shared kitchen of our inn and enjoyed in our room overlooking the Quoddy Narrows and Canada in the distance.
With the commencement of barbecue season on Monday, a recipe for your summer menu line-up:
Salmon burgers redolent of chillies, garlic and garden-grown dill + mint.
There are certain foods, when in season, I couldn’t possibly get my fill of. Summer’s juicy tomatoes, herbs, figs and tender greens; in autumn, pomegranates, pumpkins, peppers and persimmons — an alliterative season; hearty winter squash, beets and colorful citrus fruit during the winter months; and in spring, sweet snap peas, strawberries and asparagus.
This frittata, with thin asparagus, zucchini, fresh dill and sun-dried tomatoes, welcomes spring to the table, perfect as a light main or nourishing side.
When the temperatures are low and the winds are biting I crave all things warm and exotic from the kitchen. Consistently better weather, minus spring tornado season, is just moments away, but while we wait, bring on the spicy complexity of North African and Middle Eastern flavors and foods.
Smoked paprika and Ethiopian berbere — a mix of spices that includes dried red chiles de árbol and a slew of aromatics — steal the show here, with red onion, garlic, spicy fresh ginger and rich sun-dried tomatoes rounding out the earthy black lentils. A splash of balsamic vinegar swirled in at the end as a subtle but bright touch bringing everything together.
